Leather can be crafted by using 4x Rabbit Hide in the crafting grid.

You can also find Leather in chests in Bastion Remnants and Villages. They have a medium chance to contain 1-3x Leather.

Piglins in the Nether dimension can trade 2-4x Leather with you for 1x Gold Ingot.

Alternatively, you can go fishing for 1x Leather with a 0.4-1% chance each cast.
