Sadly, Genshin Impact does not allow you to choose your online visibility (there is no such thing as offline mode). I too want that function to be real, but it's not available - and we will never know whether Genshin Impact will have the offline option. 

But what if I told you there is another way to make yourself seem offline in Genshin Impact? Follow these steps below to make it seem you are offline on Genshin Impact!

Open the Main Menu and Click on Co-op Mode


Click Co-op Mode

Assuming you have Genshin Impact, open the main menu by clicking "Esc" on your keyboard, and locate the "Co-op Mode" button. It should be the same as the image provided above. Once you have located it, click it.

Click on World Permissions


Click World Permissions

Locate the button that mentions "World Permissions: ...", found under the list of other random Genshin Impact players that are on the same server. It should be on the bottom right corner of the screen, as highlighted in the picture above.

If you have not changed this setting before, your Genshin Impact Co-op Mode should be on the default "World Permissions: Join After Approval". This setting will allow your friends to know if you are online or not as you would have to manually accept them to allow them to enter your world.

It can also prevent unnecessary disturbances - like how some of the most popular Genshin Impact YouTubers and streamers would like to have, so Genshin Impact can feel like an online game played offline for once (while still retaining all its other online features of course!).

Click on World Permissions: Reject Join Requests

Following the steps above correctly, your screen should show three options for World Permissions. Out of the three, make sure to select "World Permissions: Reject Join Requests". This should be the first option, as highlighted in the picture above.

Similar to how you want to avoid getting seen or disturbed while playing other multiplayer games, the offline or online status in Genshin Impact is by setting your World Permissions (like how some of the most fun characters can hinder your exploration when your friends use their skills on you!). By automatically rejecting all incoming join requests, it is as if you appear offline.

On the bright side, not allowing anyone to enter can partially help you to fix lag in Genshin Impact, but it'll make you seem like you're being anti-social, and you miss out on making friends with other people from different parts of the world!
